Understanding Category Levels
To increase or decrease the amount of levels you would like to use please open the Inventory Module. Click on Tools > Category Editor. Now click on the button to the far left that reads Options. You will be able to select 1, 2, or 3 levels.
Here is a simple break down of the category structure.
This is how it would actually look like if you used 3 levels.
All Departments (Parent level)
Men's Apparel (level 1)
Boys (level 2)
Pants (level 3)
This is how it would like if you switched to 2 levels.
All sections (Parent level)
Boys (now level 1)
Pants (now level 2)
This is how it would look like if you used 1 level.
All sections (Parent level)
Pants (now level 1)
As you can see, the last category moves one step up as you decrease the amount of levels to be used.

Examples of when to change the levels used is as follows.
Some stores only sell women's clothing so they use 1 level because they sell items that all fall under 1 category like women's clothing. Now let's say they sell women's pants, shirts, skirts, and shoes. So when they are adding an item and must select a category from the drop down menu in the add item screen they only see pants, shirts, skirts, and shoes.
Other stores sell numerous items many of which require more categorization levels. This helps further organize their items.
For example, they could use 3 levels to obtain the following results
Furniture (level 1) - Beds (level 2) - king size (level 3).
But keep in mind that the levels are displayed backwards when adding the item.
For instance, in the add item screen the category field would display
King Size - Beds - Furniture.
